Beautiful Japanese santoku made with damask steel blade. The core of the blade is rust resistant VG10-steel with a cover of classic damask steel. In total 33 layers of steel. The top of the blade shows a hammer pattern. This looks nice and also prevents food from sticking.  
   

 
 The handle is made of very smooth feeling Spanish mahogany. It has a warm appearance with a deep red colour. The shape of the handle, combined with the stainless steel bolster has a more European look. A special blend of various styles. Of course the blade has a classic Japanese edge. That means that the blade incredibly sharp out of the box.  
   


For the maintenance of this knife we recommend ' Naniwa ' Japanese Waterstones.

Ich habe nach langer Recherche mich aufgrund der wirklich vielen positiven Bewertungen auf dieses Messer geeinigt. 
Das Messer fühlt sich sehr hochwertig an und liegt sehr gut in der Hand. Einziges Manko hier ist die Zwinge, bzw. der Kropf ist schief und so auf einer Seite ungefähr einen Millimeter länger als auf der anderen. Merkt man nicht und ist auch nicht weiter schlimm aber ist da.
Jetzt kommen wir zum großen Problem. Das kommt aber eher von der Händlerseite. Großes Pluspunkt war, der Preisangleich an einem anderen Preis. ABER, das Messer kam nicht scharf an. Den Papiertest konnte das Messer nicht bestehen. Es riss mehr das Papier als es zu schneiden. Das Messer selbst wurde auch nicht richtig verpackt und flog auch so schutzlos durch das Paket. Auf meinen Anfragen wurde leider nicht geantwortet. Ich hoffe das wir noch auf irgendeine zufriedenstellende Lösung kommen.

Ondertussen heb ik zowat een messenverzameling en dit is er eentje die er echt bovenuit springt. En dit zowel esthetisch als praktisch. Absoluut vlijmscherp geleverd (gepolierde snede). Het handvat voelt goed aan en ligt perfect in de hand. Dit is uiteraard subjectief, zoals ook de looks. Met het rode handvat en de gehamerde damast een lust voor het oog.
Zeker een aanrader.

Nice balance, easy to sharpen (very sharp), comfortable Western style handle. As a general purpose kitchen knife, hard to fault and the hammered finish is attractive.  There are knives which are finished to a higher specification and tolerance but they cost a lot more - excellent value here.

Alweer dit mes. Jaja alleen is deze voor mijn jongste dochter. Zelf heb ik hem al jaren. Mijn oudste dochter heb ik dit mes ook al gegeven toen ze uit huis ging. Beiden zijn ze opgegroeid met dit fijne mes. Ligt super in de hand en is gewoon een alleskunner.  Prijstechnisch: veel mes voor een scherpe prijs.
