The Miyabi 6000MCT knives are the perfect symbiosis of ultimate functionality and unique aesthetics. The blade is made of ice-hardened Micro-Carbide Cryodur steel, folded between two layers of other steel. This steel is hand-hammered (Tsuchime), which gives the blade a gorgeous traditional look. The small dents on the blade make sure food does not stick to it. The 63HRC steel makes it a very hard blade. The blade is Honbazuke-sharpened and combined with the high hardness guarantees ultimate sharpness. The stabilised cocobolo-wood handle is ergonomically shaped and the mosaic pin completes this beautiful knife.   
  


The knives are made in Seki, Japan, where Zwilling J.A. Henckels combines German quality with Japanese craftmanship.

ein wunderschönes Messer - nur live noch schöner als auf dem Bild
fast schon zu schade zum Gebrauchen

ist aber out of the box brutalst scharf (also echt aufpassen)
liegt sehr gut ausbalanciert in der Hand
(für mich) ein optimales Gewicht um auch länger zu Schnipseln
pflegeleicht (Griff ab und zu mit geeignetem Oel behandeln und gut ist; bisher noch keine Kratzer eingefangen, wird mit Microfasertuch getrocknet und wird nie im Leben eine Spühlmaschine von innen sehen - ist wohl klar!)

kann ich nur empfehlen

überlege mit das Petty aus der Linie noch zu kaufen - mehr braucht man dann in der Küche nicht mehr (das alte Zeugs geht dann in Pension)

Das Messer war gut verpackt und hatte gute Schärfe.Professionel Messer zu schleifen ist mein Hobby, aber ich habe mich entschieden das Miyabi erstmals nicht schleifen. Es ist 1,5 Monaten Im Einsatz und ist immer noch scharf.

Please note that knives are almost always sharpened by hand, even in factories. This value is therefore only an indication of a single tool measured by us.
