This **Tojiro Zen Black sujihiki knife**
has a long blade with which you can quickly cut through a piece of meat or fish in one go. As such you prevent using a sawing movement and end up with the best results. This is a real must-have for sushi enthusiasts. Amazing when cutting through maki rolls and to cut sashimi for on nigiri. In addition to sashimi you can also use a sujihiki to cut thin slices of smoked ham or carpaccio.


## Tojiro Zen Black blade


For knives there is always a compromise between hardness (sharp, but brittle and less stainless) and flexible (less sharp and less brittle, more stainless). Tojiro opted for a multi-layer construction. The core is made from VG10 steel surrounded by 13-chrome steel. This leaves you with a unique combination of hardness and a much higher corrosion-resistance than with carbon steel. The black oxidized finish of the blade makes the blade look amazing. 


## Tojiro Zen Black handle


The handle is made from light-weight dark-coloured chestnut wood. It is enhanced with a traditional Japanese D-shape. This is a right-handed knife, but left-handed users won't be bothered by this asymmetry.
