The Tojiro Basic F-318 petty is a simple yet effective kitchen knife and the Japanese version of a paring knife. Petty might mean inferior. But this knife most certainly isn't. Thanks to its slim shape you can use this knife to peel vegetables and fruit or for the smaller cutting jobs in the kitchen. It is not that surprising that many professional chefs use this knife on a daily basis. Make sure you don't pry or chop with this knife. As with every good Japanese knife the right cutting technique is key.

This is handy sized smallish knife for when you don't need to get the big boys out of the drawer (or Block.) It's very sharp when it arrives and good size and length, it is a little bit light for my tastes but that isn't a criticism at all, its a great smaller knife all around. I can't comment on how long it stays sharp as I haven't had it long, but it looks good so far and part of the point of having a nice knife is to show off your sharpening skills anyway.
