This **Tojiro Atelier Wenge santoku** is a beautiful, handmade santoku with traditional looks. A santoku knife is incredibly versatile. You use it when cutting vegetables, meat and fish, but also when, for instance, chopping herbs, crushing pepper corns or peeling a clove of garlic. Many people believe it to be an indispensable kitchen knife!

## Tojiro Atelier Wengé hand-forged blade

When it comes to knives, there is always a compromise between hardness (sharp, but brittle and less stainless) and flexibility (less sharp and less brittle, more stainless). Tojiro opted for a multi-layered construction. The core of the blade is made from VG10 steel, which is then enveloped between 62 layers of stainless steel. This leaves you with a unique combination of hardness and a much higher corrosion-resistance than with carbon steel. The brut de forge finish of the blade emphasizes the handmade nature of this knife.

## Tojiro Atelier Wenge handle

The handle is made from wenge wood. This is a dark type of wood with a very nice pattern. The handle has a traditional, Japanese octagonal shape. As a result, the knife is suitable for left-handed use and right-handed use alike. This octagonal shape is often used for high-quality Japanese kitchen knives.
