I have used a similar boning knife for some years and it is extremely useful for dealing with boning situations. Needs to be kept sharp, but an occasional strop on a steel is enough. The quality of the blade is great and the handle is very comfortable to use. I estimate that this knife is good, and is likely to be a long time in the kitchen.
