## Laguiole en Aubrac cutlery set: stainless steel blade

The blade is made from stainless 12c27 Sandvik steel. A type of steel with a relatively high carbon content making the knife razor-sharp and rock-solid. However, it is not a type of steel that is prone to rust or end up with ugly spots. In addition, you can also easily sharpen it yourself, if, after some time, the knife has lost some of its sharpness. Because of the smooth edge, the knife will cut through the meat gradually. This is in contrast with a serrated edge which pulls the fibres apart. Using a smooth-edged knife keeps the meat juicy and tender. 

## Laguiole en Aubrac cutlery set: walnut wood handle

The handles are made from walnut wood. A dark, hard type of wood with a nice pattern. This type of wood is known for its fancy look and feel and is in nice contrast with the light steel. The handle is enhanced with additional decorations. The spine is embellished with file work that was applied by hand, the characterizing Laguiole bee and the scales are attached with rivets. In the middle of the handle these rivets are shaped like a shepherd's cross. This cross refers to the legend of catholic shepherds who, during their crusades to Spain, wanted to pray far away from a church or chapel. They put the knife, with the cross facing forwards, in the ground to say a prayer.
