The **Chef'sChoice Model 120** is a professional electric sharpener. The machine has several stages. The first two stages have diamond metal discs and stage three has a special honing/polishing disc. With this machine, you can produce a really sharp edge on your normal and serrated knives in a short space of time. Its special resilient blade guides automatically ensure the correct sharpening angle, so guesswork is a thing of the past.

The Chef'sChoice model 120 knife sharpener is a specially designed precision device that will sharpen your valuable knives correctly and will also last a long time. The machine works significantly better than a normal honing steel or loose sharpening stones. An average household has an average of ten knives, and the services of a professional sharpening service can be quite expensive. Unnamed electric knife sharpeners often do more harm than good, and can even dull or, worse, destroy your knives. Chef'sChoice machines are the only electric knife sharpeners recommended by sharpening specialists as well as leading professional chefs.

  * The Model 120 safely sharpens both expensive and inexpensive knives, and has no problem handling even the hardest alloys.

  * Stage 1 creates the correct sharpening angle, stage 2 refines the edge, and stage 3 polishes the edge. Although the ultra-fine, flexible disc in this last step removes very little material, this is the most important step in achieving the actual sharpness.

  * Once you use a Chef'sChoice, you'll no longer need a honing steel, because the lack of any kind of guidance on a honing steel will actually make the new super-fine edge blunter rather than sharper.

  * The sharpening discs will last for a very long time under normal household use, but should they become worn out after many years of service, they can be replaced. Some technical understanding is required to replace the sharpening discs. If you can't replace the discs yourself, you can send the machine to Chef'sChoice. They will fit the new sharpening discs, thereby safeguarding the quality of the machine. 

  * The special honing/polishing discs in step 3 can be cleaned if they become dirty after a while and you find that their polishing effect has diminished. 

There is a special switch on the rear of the machine for this purpose.
