The Victorinox professional kitchen scissors of are made of stainless steel which is can be sterilized. One side of the cutting edge has micro-serration that makes cutting a little easier. The length of the finger hole to the hinge makes sure a lot of pressure can be put on the scissors during cutting. The scissors can be taken apart for easy cleaning. Also, with the pivot screw the tension or resistance of the hinges can be adjusted. It’s symmetrical and can be used by left-handed and right-handed users.
