Hand-forged utility knife with a  blade length of 13.5 cm from the Eden Kanso Aogami series. Features a handle that is specially designed for left-handed users.

The **Eden Kanso Aogami utility knife** is a real all-rounder. The knife has a slim, long blade and can be used for a wide range of cutting tasks. The blade is curved and has a pointed tip. This allows you to rock the knife to chop food. The point is used for the precise cutting tasks. For every task in the kitchen a chef's knife is a little too big, you can use this knife. Whether it's cutting cheese, sausage or finely chopping herbs.

## Blue Paper Steel blade

This 13.5 cm Japanese knife was forged by hand and made from Blue Paper Steel. Blue Paper Steel is White Paper Steel with the addition of small amounts of chrome and tungsten. It might make the steel a little less traditional but it does improve the qualities. Blue Paper Steel is more resistant to corrosion and chipping than White Paper Steel, although it is certainly not a stainless steel type. The knife will namely quickly form a patina. This is an oxidation layer that protects the knife from rust. You can recognize a patina by the discolouration of the surface of the blade. ## Classic Japanese handle

The classic red sandal wood handle is asymmetrical. As such it feels great in hand. The shape of the handle is perfect for left-handed use. This doesn't mean, however that it cannot be used by right-handed users. I will only be a little less comfortable to use.

## Sharpening Eden Kanso Aogami kitchen knives

Don't sharpen these knives in a pull-through sharpener! Because of the rock-solid steel and the sideways movements that occur in a pull-through sharpener pieces of the edge could break off. We therefore advise you to carefully sharpen by hand on a sharpening stone, sharpening steel or with a sharpening system.

Persoonlijk prefereer ik een full flat ground snijblad voor een keukenmes in tegenstelling tot een semi holle slijping.
Aangezien het blad in zjjn geheel redelijk dun geslepen is vormt het geen merkbaar probleem bij het snijden van groenen en dergelijke.
Geen "zoekerig" snijgedrag van het mes.
De afwerking van het blad oogt goedkoop, de "hamon" is gestraald en het is erg grof afgewerkt.
Het dondere gedeelte van het blad vervaagd snel, wat verder geen ramp is.
Bij het droog vegen van het lemmet is weerstand merkbaar en irritant vanwege de grove structuur van het lemmet oppervlak, alleen de snede is glad.
Ik heb het mes geslepen tot op korrel 10.000 en het behoud wel langere tijd zijn scherpte ten opzichte van de meest doorsnee keukenmessen, wat in dit geval het enige voordeel van dit mes lijkt te zijn.
Het houten heft ligt redelijk in de hand, maar naar mijn idee heeft het linker of rechter grip concept geen echte voordelen ten opzichte van een conventioneel heft.
Het blad heeft geen krop, wat de slijping en bruikbaarheid van het snijdende gedeelte wat voordeel geeft.


Na veel getob, gezoek en gedraai de knoop doorgehakt om de aogami kanso lijn aan te schaffen van Eden  (23cm gyuto, office en utility). eerste indruk: licht, scherp, zéér reactief. Verder goed verpakt, goed verstuurd. messen zijn out of the box redelijk scherp, maar na een slijpsteen behandeling zijn ze echt abnormaal scherp. wel regelmatig goed droog vegen tijdens gebruik. zeer zeker een aanrader voor de (hobby)chef!

Mooi mes,prima kwaliteits/prijsverhouding en voor een linkshandige een heerlijk mes dat perfect in de hand ligt

Niet roestvrij. Wel een erg goed mes. Met de 3000/10000 steen is het mes nog veel scherper te krijgen dan bij aflevering.
