The **Sakai Takayuki Blue 2 Steel Japanese Style 01297 mukimono** is a stylish Japanese kitchen knife that is widely used for the Japanese art of Mukimono. Mukimono is the decorative cutting of fruit or vegetables to garnish a dish. A mukimono knife can be recognized by its pointed, very sharp tip and straight edge. 

## Sakai Takayuki Blue 2 Steel: steel with a remarkable grind

The knives are made from Blue 2 Steel. Also called Aogami #2. It is a very pure carbon steel with the addition of small amounts of chromium and tungsten. The steel may be a little less traditional because of this, but it also ensures that blue paper steel can handle corrosion or chipping, and it is also easier to sharpen than pure carbon steel. Despite the additions, however, it is certainly not a stainless steel! You still need to be careful with acids and moisture. Wash the knife by hand immediately after use and then dry it with a dry cloth.

The grind is just as remarkable as the steel. The knives have a one-sided grind. Because of this grind, the edge pushes the slices off the blade. To make cutting even smoother, the other side of the blade has a hollow grind. This subtle cavity means there is always a little air between the ingredient and the knife, for the lowest possible resistance! This allows you to cut wafer-thin, delicate slices.

Sharpening a one-sided and hollow-grind blade is slightly different than a standard kitchen knife, where you sharpen both sides of the blade at the same angle. First sharpen the sharpened side of the blade. As soon as you feel a burr on the other side of the knife (on the hollow-ground side), place the knife with this hollow side flat on the sharpening stone to remove the burr.

The traditional octagonal handle is made from ebony wood. This is a dark hardwood that doesn't just look beautiful, it is also highly resistant to moisture. The crop is made from black buffalo horn.
