The **Sakai Takayuki Blue 2 Steel Japanese Style 01255 kamagata usuba** is a stylish Japanese vegetable knife. This kamagata usuba has a blade shape with the spine rounding off at the end of the blade towards the tip of the knife. This makes the knife very similar to a mix between a santoku and a nakiri. We don't know the exact reason for this curve, but the knife is extremely suitable for finely slicing or chopping meat, fish and vegetables.

## Sakai Takayuki Blue 2 Steel: steel with a remarkable grind

The knives are made from Blue 2 Steel. Also called Aogami #2. It is a very pure carbon steel with the addition of small amounts of chromium and tungsten. The steel may be a little less traditional because of this, but it also ensures that blue paper steel can handle corrosion or chipping, and it is also easier to sharpen than pure carbon steel. Despite the additions, however, it is certainly not a stainless steel! You still need to be careful with acids and moisture. Wash the knife by hand immediately after use and then dry it with a dry cloth.

The grind is just as remarkable as the steel. The knives have a one-sided grind. Because of this grind the edge pushes the slices off the blade. To make cutting even easier, the other side of the blade is enhanced with a hollow grind. This subtle cavity means there is always a little air between the ingredient and the knife, for the lowest possible resistance! This allows you to cut wafer-thin, delicate slices.

Sharpening a one-sided and hollow-grind blade is slightly different than a standard kitchen knife, where you sharpen both sides of the blade at the same angle. First sharpen the sharpened side of the blade. As soon as you feel a burr on the other side of the knife (on the hollow-ground side), place the knife with this hollow side flat on the sharpening stone to remove the burr.

The traditional octagonal handle is made from Magnolia wood. This is a dark hardwood that doesn't just look beautiful, it is also highly resistant to moisture. The crop is made from black buffalo horn. In addition to it looking graceful, the crop also ensures that the knife is perfectly balanced. Take into account that wood and horn are natural products. The product you receive may differ with regard to pattern and colour. The materials used remain the same.
