The **Kai Shun Tim Mälzer turning knife** was designed by top chef Tim Mälzer. This turning knife is great when peeling vegetables and fruit such as potatoes and apples. All in all, a beautiful, functional knife to be loved.

The Kai Tim Mälzer knives are enhanced with KAI's famous damask layered metal structure, combined with a very strong core of VG10 steel. The core of the blade is on the outside enhanced with 32 layers of stainless damask steel. The hardness of these blades is 61 ±1 HRC, which is exceptionally hard. As such this knife retains its sharpness for a very long time. The handle is made from brown walnut wood and feels very comfortable in hand.

Please note that knives are almost always sharpened by hand, even in factories. This value is therefore only an indication of a single tool measured by us.
