The **De Buyer Prima Matera Tradition copper saute pan, 28 cm** is a versatile and fancy pan. ## De Buyer Prima Matera Tradition: copper, stainless steel and cast iron.

The pans from the Prima Matera Tradition collection are, except from the cast iron handle, the same as the standard Prima Matera collection. This solid handle ensures you have a lot of control over the pan. The pan is amazing to use and looks very fancy. Copper is one of the best heat conductors and distributes heat exceptionally well. It's not without reason that copper pans have been used by top chefs worldwide for decades. Controlling the temperature is easier in this pan. This makes it highly suitable for making sauces or melting chocolate. The inside of the copper pan is made of stainless steel, As such it is easier to clean. The ergonomic handle is also made of stainless steel and doesn't get hot during cooking. The pan is suitable for all heat sources. This includes induction, thanks to the magnetised base. This de Buyer Prima Matera is indispensable for every cooking enthusiast!

## Copper pans: maintenance

The copper Prima Matera pan needs a bit of maintenance to keep it in top condition. Regularly polish the outside of the pan with [de Buyer copper polish](/en/pt/-de-buyer-copper-polish-150-ml-420001n.htm). This preserves the beautiful copper colour. Clean the pan after each use with water and a mild detergent. Are there still food residues in the pan? Fill the pan with lukewarm water and mild detergent and let it sit for a few hours. Then clean the pan with a sponge. To prevent rust from forming, we strongly advise against cleaning it in the dishwasher.
